Ingredients

  • 1 large flour tortilla
  • 1 cup cooked rice
  • ½ cup canned black beans
  • ½ red bell pepper
  • ½ yellow bell pepper
  • ¼ cup sour cream
  • ½ cup shredded cabbage
  • ½ lime

Instructions

    Dice the 1/2 red and 1/2 yellow bell pepper into small pieces. Warm the 1 large flour tortilla in a dry skillet over medium heat for 30 seconds per side until pliable.

    In a bowl, mix the 1 cup cooked rice, 1/2 cup black beans, and diced peppers. Season with salt and pepper. Microwave for 1-2 minutes until hot.

    Spoon the rice-bean mixture down the center of the tortilla. Fold in the sides and roll tightly to enclose the filling.

    Place the burrito seam-side down in a hot skillet over medium heat. Cook for 2-3 minutes per side until golden and crisp.

    Slice the burrito in half. Top with the 1/4 cup sour cream and 1/2 cup shredded cabbage. Serve with the 1/2 lime cut into wedges for squeezing.
