Ingredients
- 1 large flour tortilla
- 1 cup cooked rice
- ½ cup canned black beans
- ½ red bell pepper
- ½ yellow bell pepper
- ¼ cup sour cream
- ½ cup shredded cabbage
- ½ lime

Dice the 1/2 red and 1/2 yellow bell pepper into small pieces. Warm the 1 large flour tortilla in a dry skillet over medium heat for 30 seconds per side until pliable.

In a bowl, mix the 1 cup cooked rice, 1/2 cup black beans, and diced peppers. Season with salt and pepper. Microwave for 1-2 minutes until hot.

Spoon the rice-bean mixture down the center of the tortilla. Fold in the sides and roll tightly to enclose the filling.
