Ingredients
- 1 lb minced meat (beef, pork, or chicken)
- 2 cups cooked rice
- 2 large eggs
- 1 medium onion
- 1 medium bell pepper
- 1 medium zucchini

Heat 1 tbsp vegetable oil in a large skillet over medium-high. Add 1 sliced onion and 1 sliced bell pepper, cook until softened, about 4 minutes.

Add 1 lb minced meat and 1 diced zucchini. Cook, breaking up the meat, until browned and cooked through, about 6 minutes. Season with salt and pepper.
