In a large bowl, combine 2 cups millet flour and 1 teaspoon salt. Gradually add 1 cup warm water, mixing until a soft dough forms. Knead for 2-3 minutes until smooth.

Fold in 1/2 cup finely chopped onion, 1/4 cup chopped cilantro, and 1 teaspoon red chili flakes. Knead briefly to distribute evenly.

Divide the dough into 8 equal balls. Keep them covered with a damp cloth to prevent drying.

Heat a cast-iron skillet or griddle over medium-high heat. Lightly oil the surface with 1 teaspoon of the oil.

Take one dough ball, flatten it between your palms, then roll it out on a lightly floured surface into a 6-inch round, about 1/4-inch thick.

Place the flatbread on the hot skillet. Cook for 1-2 minutes until bubbles form and the bottom is golden brown.

Flip and cook the other side for another 1-2 minutes, pressing gently with a spatula. Brush with a little oil if desired.
