Ingredients

  • 1 9-inch pie crust
  • 2 cups milk
  • ½ cup sugar
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Instructions

  1. 1

Preheat oven to 350°F. Place the pie crust in a 9-inch pie dish and crimp edges.

  2. 2

In a saucepan, heat milk and butter over medium until butter melts and milk is hot, but not boiling.

  3. 3

In a bowl, whisk sugar, flour, and egg yolks until smooth and pale.

  4. 4

Gradually whisk hot milk into the egg mixture, then return everything to the saucepan.

  5. 5

Cook over medium heat, stirring constantly, until thickened, about 5 minutes. Remove from heat and stir in vanilla.

  6. 6

Pour the custard into the prepared crust and sprinkle with cinnamon.

  7. 7

Bake for 20-25 minutes until the custard is set but slightly jiggly in the center. Cool completely before slicing.
