Ingredients
- 4 large squares banana leaves
- 1 lb white fish fillets
- 2 medium lime
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 cups mixed shredded vegetables (cabbage, carrot, bell pepper)

Cut the 1 lb fish fillets into 1-inch chunks and pat dry with paper towels. Heat 1/2 inch oil in a skillet over medium-high until shimmering, about 2 minutes.

Fry the fish in a single layer, turning once, until golden and crispy, about 4-5 minutes total. Drain on paper towels and set aside.

In a small bowl, whisk the juice of 2 limes, 2 tbsp fish sauce, and 1 tbsp sugar until the sugar dissolves, about 1 minute.

Soften the 4 banana leaf squares by passing them over a flame or dipping in hot water for 10 seconds. Place a spoonful of the 2 cups shredded vegetables and a few fish pieces on each leaf.

Drizzle with the lime sauce, fold the leaf into a parcel, and serve immediately. Add chili or ginger if you like.
