Ingredients

  • ½ lb shrimp, peeled and deveined
  • ¼ lb ground pork
  • 8 oz fresh rice noodles (bánh hỏi or mì quảng)
  • 3 tbsp fish sauce
  • ½ tsp turmeric powder
  • ¼ cup roasted peanuts, crushed
  • 1 whole lime (juiced) + fresh herbs (mint, cilantro, or dill, chopped)

Instructions

    Heat 2 tbsp oil in a wide skillet over medium-high. Brown ground pork, breaking it apart, until no pink remains, about 4 minutes. Transfer to a plate.

    Add shrimp to the same skillet with another splash of oil. Sear 90 seconds per side without moving until edges curl and turn pink.

    Pour 1.5 cups water into the skillet. Stir in fish sauce and turmeric. Simmer 2 minutes to infuse, then add rice noodles.

    Gently toss noodles in the broth until they soften and absorb the liquid, about 2 minutes. Return pork to the skillet.

    Divide noodle mixture between bowls. Top with shrimp, crushed peanuts, and fresh herbs. Drizzle lime juice over the top.
