Ingredients

  • 4 links (about 12 oz) merguez sausages
  • 1 large yellow onion
  • 1 cup couscous
  • 1.5 cups vegetable broth
  • ½ cup dried apricots, chopped
  • 2 tbsp olive oil
  • 1 pinch salt and pepper to taste

Instructions

    Slice the onion into 1/4-inch rounds. Cut merguez into 2-inch chunks.

    Heat oil in a large skillet over medium-high. Add merguez and cook, stirring occasionally, until browned, ~6 minutes.

    Add onion and cook, stirring often, until soft and caramelized, ~8 minutes.

    Pour in broth and bring to a boil. Add couscous and apricots, stir once, then remove from heat.

    Cover and let sit for 5 minutes until liquid is absorbed and couscous is tender.

    Fluff with a fork. Season with salt and pepper. Serve hot.
