Ingredients

  • 8 oz Oaxaca cheese (quesillo)
  • 2 oz Chorizo, optional (vegetarian)
  • 1 whole Jalapeño, thinly sliced
  • ¼ cup Onion, thinly sliced
  • 6 whole Warm flour tortillas, for serving
  • 1 whole Lime (halved)

Instructions

    Heat olive oil in a 10-inch skillet over medium-high until shimmering, about 1 minute.

    Add sliced onion and jalapeño. Sauté until softened, stirring occasionally, about 3 minutes.

    Tear or slice the Oaxaca cheese into chunks and add to the skillet. Stir gently as it melts.

    Once cheese is mostly melted and stringy, squeeze lime over top and stir once to combine.

    Transfer to a serving plate or small skillet. Serve immediately with warm tortillas for dipping.
