Ingredients

  • 1 cup gruyère cheese, shredded
  • ¾ cup emmental cheese, shredded
  • ½ cup all-purpose flour
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 cup cherry tomatoes

    Mix shredded gruyère and emmental in a bowl with a pinch of salt and pepper until combined.

    Roll cheese mixture into a tight ball the size of a small grapefruit, then freeze for 5 minutes.

    Set up three shallow bowls: one with flour, one with beaten eggs, one with panko mixed with a pinch of salt.

    Coat cheese ball in flour, shaking off excess, then dip in egg, then roll in panko until fully crusted.

    Heat oil in a deep skillet over medium-high to 350°F, then carefully slide in cheese ball. Fry 3–4 minutes, turning gently once, until deep golden brown.
