Ingredients
- ½ lb quesillo oaxaqueño (or mozzarella)
- 2 tbsp olive oil
- 2 cups tortilla chips
- ¾ cup salsa (fresh or jarred)
- ½ piece fresh lime (optional)

Heat oil in a 10-inch skillet over medium-high heat until it shimmers, about 90 seconds.

Slice the quesillo into 1/4-inch-thick rounds and lay them flat in the hot skillet.

Cook without moving until the bottom edges start to brown and the cheese begins to soften, 2–3 minutes.

Gently flip each slice and cook the other side until melty and the edges look crispy, 1–2 minutes more.

Slide the melted cheese onto a warm plate. Arrange chips and salsa alongside.

Squeeze lime over the cheese if desired. Serve immediately while hot and stretchy.
