Ingredients

  • 1.5 cups cooked rice (white or brown)
  • ¾ lb shrimp, peeled and deveined
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • 1 whole lemon (zested and juiced)

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Season shrimp with salt and pepper, then add to the skillet. Sear without stirring for 2 minutes until edges turn pink.

    Flip shrimp and cook 90 seconds more until centers are opaque. Transfer to a plate.

    In the same skillet, whisk together 2 tbsp olive oil, lemon juice, lemon zest, 1 tsp salt, and a pinch of black pepper for 30 seconds.

    Divide cooked rice between two bowls. Top with cucumber, tomato, shrimp, and feta.

    Drizzle lemon dressing over the bowls and serve immediately.
