Ingredients
- 1.5 cups cooked rice (white or brown)
- ¾ lb shrimp, peeled and deveined
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup feta cheese, crumbled
- 1 whole lemon (zested and juiced)
