Ingredients

  • ¼ cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic cloves, minced
  • 1.5 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1.5 lbs beef sirloin, cut into 1.5-inch cubes
  • 1 medium red bell pepper, cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks
  • 1 medium zucchini, cut into 1-inch rounds
  • 1 cup Greek yogurt tzatziki sauce
  • 4 pieces pita bread
  • 2 whole fresh lemon wedges
  • 2 tbsp fresh mint, chopped

Instructions

    In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper.

    Add beef cubes to the marinade and toss well to coat. Cover and refrigerate for at least 20 minutes.

    Soak 8 wooden skewers in water for 15 minutes to prevent burning.

    Prepare bell pepper, onion, and zucchini chunks and set aside.

    Preheat grill to medium-high heat (400°F).

    Thread beef cubes and vegetables onto skewers, alternating between beef, pepper, onion, and zucchini.

    Place kebabs on grill grates and cook for 10-12 minutes, turning every 2-3 minutes, until beef reaches 140°F internal temperature for medium-rare.
