Ingredients

  • 1.5 lb ground beef
  • 1 medium onion
  • 1 large egg
  • ½ cup breadcrumbs
  • 2 lb potatoes
  • 2 tbsp butter
  • ¼ cup milk
  • 1 cup brown gravy

Instructions

  1. 1

Preheat oven to 375°F. Peel and chop the 2 lb potatoes into chunks, then boil in salted water until fork-tender, about 15 minutes.

  2. 2

While potatoes cook, finely chop the 1 medium onion. In a large bowl, mix the 1.5 lb ground beef, chopped onion, 1 large egg, and 0.5 cup breadcrumbs until just combined.

  3. 3

Press the meat mixture into a 9x5-inch loaf pan, smoothing the top. Bake for 30 minutes until the meat is browned and cooked through (internal temp 160°F).

  4. 4

Drain the potatoes and mash with the 2 tbsp butter and 0.25 cup milk until smooth. Season with salt and pepper.

  5. 5

Remove the meatloaf from the oven and spread the mashed potatoes evenly over the top. Return to oven and bake for 10 more minutes until the topping is lightly golden.

  6. 6

Let the meatloaf rest for 5 minutes, then slice and serve with the 1 cup brown gravy. Add a side of lettuce, tomato, and hard-boiled egg if desired.

  7. 7

For extra flavor, stir a teaspoon of Worcestershire sauce or mustard into the meat mixture before baking.
