Ingredients
- ½ lb ground beef
- ¼ cup panko breadcrumbs
- 1 whole egg
- 1.5 cups marinara sauce
- 2 whole sub rolls
- ¾ cup mozzarella cheese, shredded

Mix ground beef, breadcrumbs, egg, and a pinch each of salt and pepper in a bowl until just combined.

Roll mixture into 8 meatballs about 1.5 inches across.

Heat 1 tbsp olive oil in a skillet over medium-high until shimmering, about 1 minute.

Add meatballs and cook without stirring for 3 minutes until bottoms brown.

Roll meatballs to brown all sides, about 2 more minutes.

Pour in marinara sauce and bring to a simmer over medium heat.

Simmer for 6 minutes, stirring occasionally, until meatballs are cooked through.

Split sub rolls open and place on a baking sheet. Heat under the broiler for 1 minute until lightly toasted.
