Ingredients

  • 1 lb beef sirloin
  • ½ cup peanut butter
  • ½ cup coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 whole lime
  • 2 cloves garlic
  • 8 whole skewers

    Slice the 1 lb beef sirloin into thin strips, about 1/4-inch thick, and thread onto 8 skewers. Set aside.

    In a bowl, whisk together 1/2 cup peanut butter, 1/2 cup coconut milk, 3 tbsp soy sauce, 2 tbsp brown sugar, juice of 1 lime, and 2 minced garlic cloves until smooth.

    Reserve 1/3 cup of the sauce for serving. Brush the remaining sauce over the skewers, coating all sides.

    Heat a grill or grill pan over medium-high heat. Cook the skewers for 3-4 minutes per side, until the meat is browned and cooked through, with a slight char.

    Serve the satay hot on banana leaves, with the reserved sauce on the side for dipping.
