Ingredients
- 1 lb ground beef
- 1 medium onion
- 12 rounds empanada dough
- ½ cup green olives
- 1 tsp cumin
- 1 tsp paprika
- 1 large egg
- 2 tbsp vegetable oil

Heat 2 tbsp vegetable oil in a skillet over medium. Add 1 diced onion and cook until soft, about 5 minutes.

Add 1 lb ground beef, 1 tsp cumin, 1 tsp paprika, and 1 tsp salt. Cook, breaking up meat, until browned, about 8 minutes.

Stir in 1/2 cup chopped green olives. Remove from heat and let cool slightly.

Preheat oven to 400°F. Place 1 tbsp filling on each of 12 empanada dough rounds.

Fold dough over filling, press edges with a fork to seal. Beat 1 egg with 1 tbsp water and brush over tops.

Bake until golden brown, 20-25 minutes. Let rest 5 minutes before serving.
