Ingredients
- 1.5 lb pork shoulder
- 2 medium zucchini
- 2 medium bell pepper
- 1 large onion
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper

Cut the 1.5 lb pork shoulder into 1-inch cubes. In a bowl, toss with 2 tbsp olive oil, 1 tsp paprika, 1 tsp salt, and 0.5 tsp black pepper. Let marinate while you prep vegetables, about 10 minutes.

Cut the 2 zucchinis into 1-inch rounds, the 2 bell peppers into 1-inch squares, and the 1 onion into wedges. Toss with remaining 1 tbsp olive oil and a pinch of salt.

Thread pork and vegetables onto skewers, alternating pieces. Leave a small gap between pieces so they cook evenly.

Preheat grill or broiler to medium-high. Cook skewers, turning occasionally, until pork is browned and cooked through and vegetables are charred at edges, about 12-15 minutes.
