Ingredients
- 1 lb diced beef or chicken
- 1 cup corn kernels
- 2 medium carrots
- 2 cups red cabbage
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp paprika

Season the 1 lb diced meat with 0.5 tsp salt, 0.25 tsp black pepper, and 1 tsp paprika. Let it sit while you prep the vegetables.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the meat in a single layer and cook until browned on all sides, about 6-8 minutes. Remove and set aside.

In the same skillet, add the remaining 1 tbsp olive oil. Add the 2 sliced carrots and 2 cups shredded red cabbage. Cook over medium heat until the vegetables are tender-crisp, about 5-7 minutes.

Add the 1 cup corn kernels to the skillet and cook for another 2-3 minutes, stirring occasionally, until the corn is heated through and slightly charred.
