Matar Paneer

Ingredients
- 8 oz paneer
- 1 cup frozen peas
- 1 medium onion
- 2 medium tomato
- 1 tsp garam masala
- ½ tsp turmeric
- ¼ cup cilantro
- 1 whole lime

Cut the 8 oz paneer into 1-inch cubes. Heat 1 tbsp oil in a large skillet over medium-high; fry paneer until golden on all sides, about 5 minutes. Remove and set aside.

In the same skillet, add 1 chopped onion and cook over medium until soft and golden, about 6 minutes. Stir in 1 tsp garam masala and 0.5 tsp turmeric; cook for 1 minute until fragrant.

Add 2 chopped tomatoes and 1/4 tsp salt. Cook, stirring, until tomatoes break down into a thick paste, about 5 minutes. Add 1 cup frozen peas and 1/2 cup water; bring to a simmer.

Return the paneer to the skillet. Simmer gently until the sauce thickens and peas are tender, about 8 minutes. Taste and adjust salt.

Garnish with 0.25 cup chopped cilantro and serve with lime wedges for squeezing over. Enjoy hot with rice or naan.
