Ingredients
- 2 lb potatoes
- 6 slices bacon
- 1 medium onion
- ½ cup milk
- 2 tbsp butter
- 1 tsp salt

Peel and chop the 2 lb potatoes into 1-inch chunks. Place in a pot, cover with cold water, add 1 tsp salt, and bring to a boil. Cook until fork-tender, about 15 minutes.

While potatoes cook, chop the 6 bacon slices into small pieces. Cook in a skillet over medium heat until crispy, about 6 minutes. Remove bacon with a slotted spoon, leaving 1 tbsp drippings in the pan.

Thinly slice the 1 medium onion and add to the skillet with the bacon drippings. Sauté over medium heat until soft and golden, about 5 minutes. Stir in the cooked bacon and set aside.

Drain the potatoes and return to the pot. Add the 2 tbsp butter and 0.5 cup milk. Mash until smooth and creamy, seasoning with salt to taste.
