Ingredients
- 1 lb mushrooms
- 3 tbsp olive oil
- 3 cloves garlic
- 2 tbsp red wine vinegar
- ½ tsp chili flakes
- ¼ cup parsley
- ½ tsp salt
- ¼ tsp black pepper

Clean the 1 lb mushrooms with a damp paper towel and slice them thickly. Mince the 3 garlic cloves and chop the 0.25 cup parsley.

Heat 2 tbsp of the olive oil in a large skillet over medium-high. Add the mushrooms in a single layer and cook without stirring for 4-5 minutes until they start to brown.

Stir the mushrooms and continue cooking until they release their liquid and it evaporates, about 5-7 minutes more. They should be golden and tender.

Add the minced garlic and 0.5 tsp chili flakes. Cook for 1 minute until fragrant, stirring constantly.

Remove the skillet from heat. Stir in the remaining 1 tbsp olive oil, 2 tbsp red wine vinegar, 0.5 tsp salt, and 0.25 tsp black pepper.

Fold in the chopped parsley. Let the mushrooms sit for 5 minutes to absorb the marinade. Serve warm or at room temperature.
