Maple-Glazed Salmon with Quinoa & Greens

Ingredients

  • 2 fillets salmon fillets (skin-on, 5 oz each)
  • ¾ cup quinoa (uncooked)
  • 3 tbsp pure maple syrup
  • 2 tbsp balsamic vinegar
  • 1 cup baby spinach
  • 1.5 cups arugula
  • ½ whole lemon (halved)

Instructions

    Bring 1.5 cups salted water to a boil. Add quinoa, cover, reduce heat to low, and simmer 15 minutes until tender and liquid is absorbed.

    While quinoa cooks, pat salmon dry with a paper towel. Season both sides generously with salt and pepper.

    Heat olive oil in a 12-inch skillet over medium-high until shimmering. Place salmon skin-side up; sear 4 minutes without moving until skin is crispy.

    Flip salmon, then add maple syrup and balsamic vinegar to the pan around (not on) the fish. Sear 2 more minutes until centers feel gently yielding.

    Toss spinach and arugula together in a bowl, squeeze lemon over, season with salt and pepper to taste.

    Spoon quinoa onto plates, top with greens, then salmon. Drizzle the pan glaze over the fish and serve immediately.
