Ingredients
- 2 fillets salmon fillets (skin-on, 5 oz each)
- ¾ cup quinoa (uncooked)
- 3 tbsp pure maple syrup
- 2 tbsp balsamic vinegar
- 1 cup baby spinach
- 1.5 cups arugula
- ½ whole lemon (halved)

Bring 1.5 cups salted water to a boil. Add quinoa, cover, reduce heat to low, and simmer 15 minutes until tender and liquid is absorbed.

While quinoa cooks, pat salmon dry with a paper towel. Season both sides generously with salt and pepper.

Heat olive oil in a 12-inch skillet over medium-high until shimmering. Place salmon skin-side up; sear 4 minutes without moving until skin is crispy.

Flip salmon, then add maple syrup and balsamic vinegar to the pan around (not on) the fish. Sear 2 more minutes until centers feel gently yielding.

Toss spinach and arugula together in a bowl, squeeze lemon over, season with salt and pepper to taste.
