  • 3 tbsp maple syrup
  • 2 tbsp dijon mustard

    Pat pork dry and season generously with salt and pepper on all sides.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork 2 minutes per side without moving until golden brown on the exterior.

    Mix maple syrup and dijon mustard, then brush over the seared pork on all sides.

    Transfer skillet to a 400°F oven and bake until the internal temperature reaches 145°F, about 8–10 minutes.
