- 3 tablespoons za'atar spice blend

Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.

Preheat your oven to 450°F (230°C) with a baking sheet or pizza stone inside. Punch down the dough and divide into 4 equal pieces.

Roll each piece into a thin round, about 1/4-inch thick. In a small bowl, mix 3 tbsp za'atar with 2 tbsp olive oil to form a spreadable paste.

Spread the za'atar mixture evenly over each dough round, leaving a small border. Carefully transfer the topped flatbreads onto the hot baking sheet.
