Ingredients
- ½ cup sago pearls
- 2 medium ripe mango
- 1 cup pomelo segments
- 1.5 cups coconut milk
- 3 tbsp sugar
- 4 cups water
- 6 leaves mint leaves

Bring 4 cups water to a boil in a pot. Add 1/2 cup sago pearls and cook over medium heat, stirring occasionally, until they turn translucent with tiny white centers, about 15 minutes.

Remove from heat, cover, and let stand for 5 minutes until fully transparent. Drain and rinse under cold water; set aside.

Peel and dice 2 mangoes. Reserve a few cubes for garnish, then blend the rest with 1/2 cup coconut milk until smooth.

In a bowl, combine the mango puree, remaining 1 cup coconut milk, and 3 tbsp sugar. Stir until sugar dissolves.

Add the cooked sago and 1 cup pomelo segments to the bowl. Gently fold to combine.

Chill for at least 30 minutes. Serve in bowls, topped with reserved mango cubes and 6 mint leaves.
