Malpua

Crispy-edged fried dough spirals soaked in sweet saffron milk, topped with pistachios. A quick Indian-inspired dessert or snack.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • ½ cup sugar
  • ¼ teaspoon saffron threads
  • 2 tablespoons pistachios
  • 1 cup oil for frying

Instructions

    In a bowl, whisk 1 cup flour and 1 cup milk until smooth; let rest 5 minutes.

    In a small pan, heat 0.5 cup sugar with 0.25 cup water and 0.25 tsp saffron until sugar dissolves, about 3 minutes; set aside.

    Heat 1 cup oil in a skillet over medium-high. Drop 2 tbsp batter per spiral, fry until golden and crisp, about 2 minutes per side.

    Dip hot spirals into the saffron syrup for 10 seconds each, then place on a plate.

    Sprinkle with 2 tbsp chopped pistachios and serve warm.
