Malabar Biryani

Ingredients
- 1.5 cups basmati rice
- 1 lb lamb stew meat
- ½ cup plain yogurt
- 1 large yellow onion
- 4 cloves garlic
- 2 whole green chili
- 2 tbsp biryani masala
- 2 leaves bay leaf

Rinse the 1.5 cups basmati rice until water runs clear, then soak in cold water for 20 minutes. Drain well.

In a large pot, heat 2 tbsp oil over medium-high. Add 1 sliced onion and 4 minced garlic cloves; sauté until golden, about 5 minutes.

Add 1 lb lamb stew meat, 2 tbsp biryani masala, 2 whole green chilies (slit), and 2 bay leaves. Cook, stirring, until lamb is browned on all sides, about 8 minutes.

Stir in 0.5 cup yogurt and 1.5 cups water. Bring to a simmer, cover, and cook until lamb is tender, about 25 minutes. Season with salt.

Spread the drained rice evenly over the lamb. Add 1.5 cups hot water (enough to just cover rice). Cover tightly and cook on low until rice is fluffy and liquid absorbed, about 15 minutes.

Let rest off heat for 5 minutes, then fluff gently with a fork. Garnish with fresh cilantro and serve with raita (yogurt with cucumber) on the side.
