Ingredients
- 1.5 lb chicken breast
- 1 cup coconut milk
- ½ cup peanut butter
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 lime
- 1 cucumber
- 1 red onion

Cut the 1.5 lb chicken breast into 1-inch strips and thread onto skewers. In a bowl, mix 2 tbsp soy sauce, 1 tbsp brown sugar, and juice of half the lime. Brush over the chicken and let sit for 10 minutes.

While the chicken marinates, make the sauce: in a small saucepan over medium heat, combine 1 cup coconut milk, 1/2 cup peanut butter, 1 tbsp soy sauce, 1 tbsp brown sugar, and juice of the remaining lime half. Stir until smooth and bubbling, about 5 minutes. Add water if too thick.

Heat a grill or grill pan over medium-high. Cook the skewers for 4-5 minutes per side, until charred at the edges and cooked through (no pink inside).

Slice the cucumber and red onion into thin rounds. Arrange on a plate with the cooked skewers.

Serve the skewers with the warm peanut sauce drizzled over or on the side. Garnish with cilantro or extra lime if you have them.
