Madura Beef Soup

Ingredients
- 1 lb beef stew meat
- 1 medium onion
- 3 cloves garlic
- 4 cups beef broth
- 1 cup rice
- 2 stalks green onions
- 1 cup rempeyek (crispy fried dough)
- 2 tbsp vegetable oil

Heat the 2 tbsp vegetable oil in a large pot over medium-high. Add the 1 sliced onion and 3 minced garlic cloves, cook until soft and fragrant, about 3 minutes.

Add the 1 lb beef stew meat, cut into bite-size pieces. Brown on all sides, about 5 minutes, until no longer pink.

Pour in the 4 cups beef broth. Bring to a boil, then reduce heat to low. Simmer until beef is tender, about 30 minutes.

Meanwhile, cook the 1 cup rice according to package directions. Set aside.

When beef is tender, season with salt and pepper to taste. Ladle soup over bowls of rice.
