Ingredients
- ½ cup butter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest

Melt the 1/2 cup butter in a small saucepan over low heat until fully liquid, about 2 minutes. Set aside to cool slightly.

In a small bowl, whisk together the 1 cup flour and 1 teaspoon baking powder. Set aside.

In a large bowl, beat the 2 eggs and 1/2 cup sugar with an electric mixer until pale and thick, about 3 minutes. Beat in the 1 teaspoon vanilla and 1 teaspoon lemon zest.

Fold the flour mixture into the egg mixture until just combined. Gently fold in the melted butter until smooth. Cover and chill the batter for 30 minutes.

Preheat the oven to 375°F (190°C). Generously butter a madeleine pan (or use a 12-cup mini muffin pan).

Spoon the batter into the molds, filling each about 3/4 full. Bake until the edges are golden and the centers spring back when touched, about 10-12 minutes.

Let cool in the pan for 2 minutes, then tap out onto a wire rack. Serve warm or at room temperature.
