Ingredients

  • 1.5 cups cornstarch
  • 1 cup all-purpose flour
  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon baking powder
  • ½ cup chocolate spread
  • 2 tablespoons powdered sugar

Instructions

  1. 1

In a large bowl, beat the 1/2 cup softened butter and 1/2 cup granulated sugar until light and fluffy, about 3 minutes.

  2. 2

Add the 2 egg yolks and beat until combined, scraping down the bowl as needed.

  3. 3

In a separate bowl, whisk together the 1.5 cups cornstarch, 1 cup flour, and 1 teaspoon baking powder.

  4. 4

Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. Do not overmix.

  5. 5

Wrap the dough in plastic wrap and chill for 30 minutes.

  6. 6

Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness on a lightly floured surface.

  7. 7

Cut into 2-inch rounds and place on a parchment-lined baking sheet. Bake until edges are just golden, about 12 minutes.

  8. 8

Cool cookies completely, then spread 1 teaspoon chocolate spread on half the cookies, top with remaining cookies, and dust with the 2 tablespoons powdered sugar.
