Ingredients

  • 1 cup almond flour
  • 1.5 cups powdered sugar
  • 2 large egg whites
  • ¼ cup granulated sugar
  • 2 drops food coloring

Instructions

  1. 1

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. 2

In a bowl, whisk together 1 cup almond flour and 1.5 cups powdered sugar. Set aside.

  3. 3

In a separate bowl, beat 2 egg whites until foamy, then gradually add 0.25 cup granulated sugar and continue beating until stiff peaks form, about 5 minutes.

  4. 4

Fold the dry mixture into the meringue along with 2 drops food coloring until just combined and smooth, about 30 folds.

  5. 5

Pipe small circles onto the prepared sheet, tap the tray to release air bubbles, then let rest for 15 minutes until a skin forms. Bake for 15 minutes, until the shells are set and peel off easily.

  6. 6

Let cool completely before filling with your favorite jam, buttercream, or ganache.
