Lucknowi Biryani

Ingredients
- 1 cup basmati rice
- ½ lb lamb
- ½ cup yogurt
- 1 medium onion
- 1 tsp garam masala
- ¼ cup mint leaves

Rinse 1 cup basmati rice until water runs clear, then soak in water for 10 minutes. Meanwhile, slice 1 medium onion thinly.

In a pot, heat 1 tbsp oil over medium-high. Add the sliced onion and cook until golden, about 5 minutes. Add 0.5 lb lamb, cut into bite-size pieces, and brown on all sides, about 5 minutes.

Stir in 1 tsp garam masala and 0.5 cup yogurt. Cook for 2 minutes until the sauce thickens slightly. Add 1.5 cups water and bring to a boil.

Drain the rice and add to the pot. Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, about 12 minutes. The rice should be fluffy and the lamb cooked through.

Fluff the biryani with a fork and fold in 0.25 cup fresh mint leaves. Serve hot with raita and green chilies if desired.
