Ingredients
- 1.5 lbs green beans, trimmed
- 14 oz canned crushed tomatoes
- 4 cloves garlic cloves, minced
- ½ cup olive oil
- 1 medium onion, diced
- 4 pieces pita bread, for serving
Instructions
- 1
Heat olive oil in a large skillet over medium. Add diced onion and cook, stirring, until soft and translucent, about 4 minutes.
- 2
Add minced garlic and cook, stirring constantly, until fragrant, about 60 seconds. Do not let it brown.
- 3
Pour in crushed tomatoes and add a pinch of salt and black pepper. Bring to a simmer, then cook for 2 minutes.
- 4
Add green beans and stir to coat. Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 15 minutes until beans are very tender.
- 5
Taste and adjust salt and pepper. If the stew looks too thick, add a splash of water. The beans should be almost falling apart.
- 6
Grill or warm the pita bread. Serve the loubieh hot with warm pita for scooping.
