Ingredients
- 1 lb beef sirloin, cut into strips
- 12 oz pasta
- 1 large red onion, sliced
- 2 medium tomato, cut into wedges
- 2 whole red chili peppers
- ½ cup evaporated milk
- 3 tbsp oil
- ¼ cup fresh cilantro, chopped
- 2 tbsp chives, chopped
- 1 tsp salt and pepper

Cook pasta according to package directions; drain and set aside.

Blend red chilies with evaporated milk and strain to make huancaína sauce.

Heat oil in a wok and quickly stir-fry beef strips until browned, about 3 minutes.
