Ingredients

  • ¾ lb beef tenderloin or sirloin, thinly sliced
  • 2 count crusty rolls or bolillo bread
  • 4 slices sliced ham
  • ½ cup melting cheese (provolone or mozzarella)
  • ¼ cup chimichurri sauce
  • 1 tbsp butter

    Heat butter in a large skillet over medium-high until it foams, about 30 seconds.

    Pat beef slices dry. Add to the hot pan in a single layer and sear 60 seconds per side without moving.

    Slice rolls in half. Layer ham and cheese on the bottom, then pile warm beef slices on top.
