Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 can (15 oz), drained and rinsed black beans
  • 1 cup diced tomatoes
  • ½ cup guacamole
  • ¼ cup sour cream
  • ¼ cup, chopped fresh cilantro
  • 1 whole, cut into wedges lime

Instructions

    Preheat oven to 425°F. Cut sweet potatoes into thin fries, about 1/4-inch thick.

    Toss fries with olive oil and a pinch of salt. Spread on a baking sheet in a single layer.

    Bake for 20-25 minutes, flipping halfway, until golden and crispy.

    Warm black beans in a small pot over medium heat, stirring occasionally, about 5 minutes.

    Pile fries on a plate. Top with black beans, diced tomatoes, guacamole, and sour cream.
