Ingredients

  • 4 count breakfast sausage patties
  • 2 cups frozen shredded hash browns
  • 4 count eggs
  • ½ cup sharp cheddar, shredded
  • 4 slices bread for toast
  • 2 tbsp butter

Instructions

  1. 1

Heat a 12-inch cast iron skillet over medium-high heat. Brown sausage patties 3–4 minutes per side until cooked through, then chop into bite-sized pieces.

  2. 2

Push sausage to skillet edges. Add hash browns to center and flatten with a spatula. Cook 5 minutes without stirring until golden on bottom.

  3. 3

Stir hash browns into sausage. Create four wells in the mixture and crack one egg into each. Cover skillet and cook 3 minutes until whites set but yolks jiggle.

  4. 4

Sprinkle cheese over eggs and around skillet. Remove from heat and let sit 1 minute until cheese melts.

  5. 5

Toast bread until golden. Butter while warm. Serve skillet hot alongside toast and coffee.
