Ingredients
- 4 count sausage patties or links
- 12 oz red potatoes, diced small
- 4 count eggs
- 1 count avocado, ripe
- 2 slices bread (sourdough or ciabatta)
- ½ cup cheddar cheese, shredded
- 2 tbsp fresh herbs (chives or parsley, chopped)

Cook sausage in a 12-inch skillet over medium-high heat until browned, breaking it into pieces as it cooks, about 5 minutes.

Add diced potatoes to the skillet with the sausage. Cook 10–12 minutes, stirring occasionally, until potatoes are crispy and golden.

Make four wells in the potato mixture and crack an egg into each well. Sprinkle cheese over everything and cover with a lid or foil.

Cook until egg whites set but yolks still jiggle slightly, 4–5 minutes. Season with salt and pepper.
