  • 8 oz beef liver
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ medium onion
  • 4 cups beef broth
  • 2 tbsp fresh parsley

Instructions

    Finely chop the 1/2 onion and 2 tbsp parsley. In a food processor, pulse the 8 oz liver, onion, parsley, 1 egg, and 1 cup breadcrumbs until a sticky paste forms, about 30 seconds.

    Bring the 4 cups beef broth to a gentle simmer in a large pot over medium heat.

    With wet hands, shape the liver mixture into 6 equal dumplings, about 2 inches wide.

    Slide the dumplings into the simmering broth and cook uncovered until they float and are firm to the touch, about 15 minutes.
