Ingredients

  • 1 cup breadcrumbs
  • 1 large egg
  • 1 medium onion
  • 4 cups beef broth
  • 2 stalks green onions
  • ½ tsp salt
  • ¼ tsp black pepper

    Finely chop the 1 medium onion. In a food processor, combine the 8 oz beef liver, chopped onion, 1 egg, 1 cup breadcrumbs, 0.5 tsp salt, and 0.25 tsp black pepper. Pulse until smooth and well combined, about 30 seconds.

    Bring the 4 cups beef broth to a gentle simmer in a large pot over medium heat.

    Using wet hands, shape the liver mixture into 6-8 dumplings, each about 1.5 inches in diameter.

    Carefully drop the dumplings into the simmering broth. Cook uncovered at a gentle simmer until they float to the surface and are cooked through, about 15 minutes.

    Slice the 2 green onions thinly. Ladle the soup into bowls, placing 2 dumplings in each, and garnish with the sliced green onions. Serve hot.
