Linguine with Roasted Cherry Tomatoes

Ingredients
- 8 oz linguine
- 12 oz cherry tomatoes
- 2 cloves garlic
- 3 tbsp olive oil
- ½ cup Parmesan cheese
- ¼ cup fresh basil

Preheat oven to 425°F. Toss the 12 oz cherry tomatoes and 2 sliced garlic cloves with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast until tomatoes burst and caramelize, about 15 minutes.

Meanwhile, cook the 8 oz linguine in salted boiling water until al dente, about 9 minutes. Reserve 1/2 cup pasta water, then drain.

In a large bowl, combine the hot pasta, roasted tomatoes and garlic, and 1 tbsp olive oil. Toss well, adding reserved pasta water a splash at a time until the sauce coats the noodles.

Stir in the 1/2 cup grated Parmesan and 1/4 cup torn basil. Season with salt and pepper. Serve immediately with extra Parmesan if desired.
