Limeade with Herbs

Ingredients
- 6 whole limes
- 4 cups water
- ½ cup sugar
- ¼ cup fresh mint leaves
- 2 cups ice cubes

Juice the 6 limes to get about 1 cup of juice; set aside. Save one lime half for garnish if desired.

In a small saucepan, combine 1 cup of the water and 0.5 cup sugar. Heat over medium, stirring, until the sugar dissolves and the syrup is clear, about 3 minutes.

Remove the syrup from heat and stir in the 0.25 cup mint leaves. Let steep for 5 minutes, then strain out the mint and let the syrup cool.

In a large pitcher, mix the lime juice, the mint syrup, and the remaining 3 cups of water. Stir well.

Fill glasses with the 2 cups ice cubes and pour the limeade over. Garnish with extra mint or a lime slice if you like.

Serve immediately, or chill in the fridge for up to 2 hours before serving.
