Ingredients
- 1 lb shrimp, peeled and deveined
- 2 whole lime
- 1 medium carrot
- 1 medium onion
- 4 cups chicken broth
- 1 cup popcorn
Instructions

Heat 1 tbsp olive oil in a pot over medium. Add 1 sliced onion and 1 diced carrot; cook until soft, about 5 minutes.

Pour in 4 cups chicken broth and bring to a boil. Reduce heat and simmer for 5 minutes until vegetables are tender.

Add 1 lb shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat.

Stir in juice of 2 limes and season with salt and pepper. Taste and add more lime if desired.
