Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 lime (juiced)
  • 2 tbsp fish sauce
  • 1 Thai red chili, thinly sliced (or 1/2 tsp red pepper flakes)
  • ¾ cup fresh mint and cilantro, chopped
  • 1 shallot, thinly sliced
  • 3 cups mixed greens or butter lettuce

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add shrimp in a single layer. Sear without moving for 90 seconds until edges turn pink.

    Flip shrimp and cook 60 seconds more until center is opaque. Transfer to a bowl.

    Whisk lime juice, fish sauce, and sliced chili in the same bowl with the shrimp.

    Toss in mint, cilantro, and shallot. Let sit 2 minutes so flavors meld.
