Ingredients
- ¾ lb large shrimp, peeled and deveined
- 2 cups green papaya, shredded or julienned
- 1.5 tbsp fresh lime (juiced)
- 1.5 tbsp fish sauce
- 1 piece red Thai chili or jalapeño, minced
- ¼ cup roasted cashews, roughly chopped
- ¼ cup fresh cilantro, chopped

Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Add shrimp and sear without stirring for 90 seconds until edges turn pink, then flip and sear 90 seconds more.

Transfer shrimp to a plate. Toss papaya, lime juice, fish sauce, and chili in a large bowl until coated.
