Ingredients

  • ¾ lb large shrimp, peeled and deveined
  • 2 cups green papaya, shredded or julienned
  • 1.5 tbsp fresh lime (juiced)
  • 1.5 tbsp fish sauce
  • 1 piece red Thai chili or jalapeño, minced
  • ¼ cup roasted cashews, roughly chopped
  • ¼ cup fresh cilantro, chopped

Instructions

    Pat shrimp dry with paper towels. Season with salt and pepper.

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add shrimp and sear without stirring for 90 seconds until edges turn pink, then flip and sear 90 seconds more.

    Transfer shrimp to a plate. Toss papaya, lime juice, fish sauce, and chili in a large bowl until coated.

    Add shrimp back to the bowl with cashews and cilantro. Toss gently and taste for balance—add more fish sauce or lime if needed.

    Serve immediately on a plate or in a lettuce cup.
