Ingredients
- 2 fish, 12-14 oz each whole sea bream (or mediterranean sea bream), cleaned and scaled
- 1.5 whole lemon
- 3 cloves, minced garlic
- ¼ cup combined fresh parsley and dill, chopped
- 3 tbsp olive oil
- 1 to taste salt and pepper

Pat fish dry inside and out. Stuff each cavity with half a lemon (sliced), garlic, and fresh herbs.

Rub outside of each fish with 1.5 tbsp olive oil. Season generously with salt and pepper on both sides.

Heat a cast iron skillet or grill to high. Water should flick and sizzle when you sprinkle it on the surface.

Lay fish on the hot surface and sear without moving for 4–5 minutes. Skin should char and blister.

Flip carefully and cook the second side for 3–4 minutes until the flesh is opaque and flakes at the thickest part.

Squeeze remaining lemon juice over fish. Serve hot with pan drippings and extra herbs if desired.
