Ingredients

  • 2 6-oz fillets salmon fillets, skin-on
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1 whole (zested + juiced) lemon

Instructions

    Pat salmon dry with paper towels, then season both sides with salt and pepper.

    Heat 1 tbsp oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Place salmon skin-side up in the pan and sear 3 minutes without moving until skin crisps.

    Flip salmon skin-side down, then add butter and garlic; cook 2 more minutes until center flakes.

    Squeeze lemon juice over the fillets and scatter zest on top, tilting the pan to baste with pan sauce.

    Serve immediately with pan sauce spooned over each fillet.
