Ingredients

  • 1 cup all-purpose flour
  • ½ cup butter, softened
  • ¼ cup powdered sugar
  • 2 large eggs
  • 3 tablespoon lemon juice, fresh
  • 1 cup granulated sugar

Instructions

  1. 1

Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.

  2. 2

Mix flour, softened butter, and powdered sugar in a bowl until it resembles sand.

  3. 3

Press mixture firmly into the prepared pan to form an even layer.

  4. 4

Bake until pale golden and firm to touch, 12–15 minutes.

  5. 5

Whisk eggs, lemon juice, and granulated sugar together until combined.

  6. 6

Pour mixture over hot crust and return to oven for 15–18 minutes.

  7. 7

Top should be set but still slightly jiggly in the center when shaken gently.

  8. 8

Cool completely in the pan, about 30 minutes, then refrigerate for 1 hour.
