Ingredients
- ½ cup butter, softened
- 1.5 cup granulated sugar, divided
- 1 whole lemon (zested + juiced)
- 1.5 cups all-purpose flour
- 1 whole egg
- ¼ tsp baking powder

Preheat oven to 350°F. Line two baking sheets with parchment.

Beat butter and 1 cup sugar until pale and fluffy, about 2 minutes.

Add egg, lemon zest, and lemon juice. Beat until combined.

Whisk flour and baking powder in a bowl. Fold into butter mixture.

Pour remaining 0.5 cup sugar into a shallow bowl. Scoop dough with a 1-tbsp cookie scoop.

Roll each ball in sugar, coating all sides. Place on baking sheet, 2 inches apart.
